This Crockpot Kielbasa and Green Beans is a hearty one-pot dinner with smoky sausage, tender potatoes, and fresh green beans slow-cooked in a savory broth. Perfect for busy weeknights with minimal prep!
Ingredients

1 lb kielbasa or smoked sausage, sliced into 1-inch pieces

1 lb fresh green beans, trimmed (or 2 cans, drained)

1 lb baby potatoes, halved (red or yellow work well)

1 medium onion, chopped

3 cloves garlic, minced

1 cup chicken broth (low-sodium)

2 tablespoons butter, cut into pieces

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (optional)

1/2 teaspoon salt (or to taste)

1/2 teaspoon black pepper

Optional garnish: 1 tbsp chopped parsley, 1 tbsp grated Parmesan cheese
Instructions

Place sliced kielbasa at the bottom of the crockpot.

Add green beans, halved baby potatoes, and chopped onions.

Sprinkle minced garlic, garlic powder, onion powder, smoked paprika, salt, and pepper over the top.

Pour chicken broth evenly over everything and dot with butter pieces.

Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.

Stir halfway through cooking for even flavor.

Garnish with parsley and Parmesan before serving if desired.
Notes
Fresh green beans hold their texture best, but canned green beans work for convenience.
For a thicker broth, stir in 1 tbsp cornstarch mixed with 2 tbsp water during the last 30 minutes.
Leftovers store well in the fridge for up to 3 days.
