Description

This cozy Crockpot Lasagna Soup has everything you love about classic lasagna—rich tomato sauce, tender noodles, savory ground beef, and melty cheese—slow-cooked into a warm, comforting bowl of goodness. Easy to make, family-friendly, and perfect for busy weeknights.


Ingredients

  • 1 lb lean ground beef (85/15)

  • 1 ½ tsp Italian seasoning, divided

  • Salt and pepper, to taste

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 4 cups beef broth

  • 1 jar (24 oz) pasta sauce (such as Rao’s Tomato Basil)

  • 2 tbsp tomato paste

  • 810 lasagna noodles, broken into pieces

  • Ricotta cheese, for topping

  • Freshly shredded mozzarella cheese, for topping

  • Freshly grated parmesan cheese, for topping

  • Fresh parsley or basil, chopped (optional)


Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef, break it apart, and season with 1 teaspoon Italian seasoning plus salt and pepper. Cook until browned; drain excess fat.

  2. Add the diced onion and minced garlic to the skillet. Cook 2–3 minutes, until softened.

  3. Transfer the beef mixture to your slow cooker. Stir in beef broth, pasta sauce, tomato paste, and remaining ½ teaspoon Italian seasoning.

  4. Cover and cook on Low for 4–5 hours or High for 2–3 hours.

  5. Add the broken lasagna noodles, stir, and cook an additional 30 minutes, or until noodles are tender.

  6. Ladle into bowls and top with ricotta, mozzarella, parmesan, and fresh herbs. Add extra salt, pepper, or red pepper flakes to taste.

Notes

For a thicker soup, use fewer noodles or reduce broth slightly.

For a soupier texture, add extra broth when reheating.

You can substitute ground turkey, Italian sausage, or chicken.

Add noodles right before serving if prepping ahead to prevent over-softening.
