This Crockpot Marry Me Chicken is a rich, creamy, flavor-packed slow cooker dinner made with tender chicken breasts simmered in a luscious parmesan, garlic, and sun-dried tomato sauce. It’s comforting, effortless, and perfect for busy weeknights.
Ingredients
4–6 boneless, skinless chicken breasts
1 packet Italian seasoning mix
1 cup heavy cream
1/2 cup chicken broth
3/4 cup sun-dried tomatoes, chopped
3/4 cup grated parmesan cheese
3 garlic cloves, minced
1 teaspoon paprika
1/2 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh basil, chopped
Instructions
Season the chicken with salt, pepper, and paprika. Place in the bottom of the crockpot in a single layer.
In a bowl, whisk together heavy cream, chicken broth, Italian seasoning, garlic, and red pepper flakes until smooth.
Pour the mixture over the chicken. Sprinkle chopped sun-dried tomatoes on top.
Cover and cook on LOW for 3–4 hours, or until chicken reaches 165°F.
About 30 minutes before serving, stir in the parmesan cheese until melted and creamy.
Garnish with fresh basil and serve over rice, pasta, or mashed potatoes.
Notes
For a thicker sauce, let the chicken rest 10 minutes before serving.
Want extra veggies? Stir in a couple handfuls of spinach during the last 15 minutes of cooking.
Chicken thighs can be substituted for an even richer flavor.
Adjust red pepper flakes to your preferred heat.
