Ingredients

4 pounds Idaho potatoes

6 tablespoons salted butter, softened

8 ounces cream cheese, softened

2 cups whole milk, warmed

Salt, to taste

Black pepper, to taste
Instructions

Peel and rinse the potatoes. Cut them into even 1-inch cubes and place them into a cold crockpot.

Add enough cold water to just cover the potatoes and sprinkle with salt. Cover and cook on HIGH for 3–4 hours, or until fork-tender.

Drain the potatoes and return them to the warm crockpot.

Add the butter, cream cheese, warm milk, salt, and pepper. Mash until smooth and creamy.

Taste and adjust seasonings as needed.

To keep warm for up to 2 hours, switch the crockpot to the “Keep Warm” setting and add 1–2 tablespoons of butter on top. Stir occasionally if your crockpot runs hot.
