Description
This Crockpot Pineapple BBQ Chicken is sweet, tangy, and irresistibly easy. With just minutes of prep, it slow-cooks into a comforting, tropical-inspired dinner the whole family will love.
Ingredients
2 lbs boneless, skinless chicken breasts (or thighs)
1 ½ cups barbecue sauce (honey BBQ recommended)
1 ½ cups pineapple chunks (drained if canned)
1 tbsp soy sauce
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Chopped green onions (for garnish)
Instructions
Place chicken breasts in a single layer at the bottom of the crockpot.
Season both sides with salt and pepper.
In a bowl, combine BBQ sauce, pineapple chunks, soy sauce, garlic powder, and onion powder. Mix well.
Pour the sauce mixture over the chicken, making sure each piece is well coated.
Cover and cook on LOW for 6–7 hours or until chicken is tender and easy to shred.
Remove chicken, shred with two forks, then return to the crockpot and stir into the sauce.
Let cook another 10–15 minutes to absorb more flavor.
Serve hot, topped with chopped green onions.
Notes
You can substitute chicken thighs for a juicier, richer version.
Want it saucier? Stir in extra BBQ sauce or pineapple juice at the end.
Serve over rice, in sandwiches, or wrapped in tortillas for easy leftovers.
