Ingredients
4 large potatoes, peeled and chopped
4 cups chicken broth
6 slices cooked bacon, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
2 tbsp butter
2 tbsp flour
1 ½ cups milk
1 ½ cups sharp cheddar cheese, shredded
½ cup sour cream

Instructions
Add potatoes, chicken broth, chopped bacon, onion, garlic, salt, and pepper to your crockpot. Stir gently to combine.
Cook on high for 3–4 hours or low for 5–6 hours, until the potatoes are fork-tender.
Lightly mash the potatoes for a chunky texture or use an immersion blender for a smoother soup.
Stir in butter and flour, then add milk, shredded cheese, and sour cream. Mix until well combined.
Cook on low for an additional 30–60 minutes, until thick and creamy.

Notes
For a vegetarian version, omit bacon and use vegetable broth.
Adjust the thickness with extra milk or broth if needed.
