Description

Ingredients

  • lbs chuck roast, cut into bite-size cubes
  • ½ cup balsamic vinegar
  • ¼ cup soy sauce
  • ¼ cup ketchup
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 1 teaspoon dried)
  • ½ teaspoon cracked black pepper
  • ½ teaspoon seasoning salt
  • 4 tablespoons salted butter, cubed
  • 2 tablespoons brown sugar (optional)

For thickening:

  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

Instructions

  1. Prep the Beef:
    Cut chuck roast into bite-size cubes. Pat dry with paper towels.
  2. Add to Slow Cooker:
    Place beef into a 7-quart slow cooker. Add balsamic vinegar, soy sauce, ketchup, honey, garlic, rosemary, pepper, seasoning salt, and cubed butter. Stir gently to coat.
  3. Cook:
    Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until beef is fork-tender.
  4. Thicken the Sauce:
    In a small bowl, whisk cornstarch with cold water until smooth. Remove lid, stir slurry into slow cooker. Add brown sugar if using.
  5. Finish Cooking:
    Cover and cook an additional 45–60 minutes until sauce thickens into a glossy glaze.
  6. Serve:
    Spoon over mashed potatoes, egg noodles, rice, or roasted vegetables. Garnish with fresh rosemary or parsley if desired.

Notes

  • Chuck roast gives the most tender results, but stew meat or sirloin may be used.
  • If sauce becomes too thick, add a splash of beef broth.
  • Store leftovers in an airtight container in the refrigerator for 3–4 days.
  • Freeze up to 3 months.
