Description

This Dump and Bake Chicken Tzatziki Casserole is a creamy, comforting one-pan meal with juicy chicken, fluffy rice, and tangy tzatziki sauce. Easy prep and big Mediterranean flavor make it the perfect weeknight dinner.

  • 1 cup long-grain white rice

  • 1 ½ cups low-sodium chicken broth

  • 1 ½ pounds boneless, skinless chicken breasts (cut into bite-sized pieces)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried oregano

  • ½ teaspoon paprika

  • 1 cup tzatziki sauce (store-bought or homemade)

  • 1 medium cucumber, sliced thinly (for garnish, optional)

  • ½ cup crumbled feta cheese

  • ½ cup chopped fresh parsley or dill (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  2. Spread the uncooked rice evenly in the dish. Pour chicken broth over rice, making sure it’s submerged.

  3. Place chicken pieces on top of the rice. Sprinkle with garlic powder, onion powder, oregano, and paprika.

  4. Spoon tzatziki sauce over chicken and spread evenly.

  5. Cover tightly with foil and bake for 35–40 minutes, until chicken is fully cooked and rice is tender.

  6. If excess liquid remains, uncover and bake an additional 5–10 minutes.

  7. Remove from oven, rest for 5 minutes, then garnish with feta, cucumber slices, and fresh herbs.

  8. Serve warm and enjoy!

Notes

Use long-grain white rice (not instant) for the best texture.
Chicken thighs can be substituted for extra juiciness.
