Ingredients
4 boneless, skinless chicken breasts
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
3 cloves garlic, minced
1 tsp dried oregano
1/2 tsp dried thyme
1/4 tsp red pepper flakes (optional)
1/2 cup chopped sun-dried tomatoes
2 tbsp butter
Salt and pepper, to taste
Fresh basil or parsley, for garnish
Instructions
Lightly season chicken breasts with salt and pepper on both sides.
In a bowl, whisk together chicken broth, heavy cream, Parmesan, garlic, oregano, thyme, and red pepper flakes.
Place chicken in the crockpot and pour sauce over it.
Sprinkle sun-dried tomatoes on top.
Cook on low for 4 hours or high for 2 hours until chicken is tender.
Add butter in the last 30 minutes, stirring to blend into the sauce.
Garnish with basil or parsley and serve over pasta, rice, or mashed potatoes.
Notes
For more flavor, use sun-dried tomatoes packed in olive oil.
Swap heavy cream for half-and-half to lighten it up (sauce will be thinner).
Boneless chicken thighs can be used instead of breasts.
