Ingredients

  • 1 red bell pepper, diced
  • 1 cup uncooked parboiled long-grain brown rice (or white rice)
  • 3 tablespoons fajita seasoning
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 cup frozen corn kernels
  • 1 (14 oz) can low sodium black beans, drained and rinsed
  • 5 cups shredded chicken
  • 3 cups reduced sodium chicken broth
  • 1 (4 oz) can mild green chilies
  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste
  • 1 1/4 cups shredded Monterey Jack cheese

Optional toppings:

  • Fresh cilantro
  • Green onions
  • Salsa
  • Avocado

Instructions

  1. Preheat oven to 400°F and lightly grease a 9×13-inch baking dish.
  2. Add onion, bell pepper, uncooked rice, fajita seasoning, and cayenne pepper. Stir to combine.
  3. In a separate bowl, whisk together chicken broth, green chilies, tomato paste, and olive oil.
  4. Pour the broth mixture into the baking dish and mix well with the rice and vegetables.
  5. Add shredded chicken, black beans, and corn. Stir until evenly combined.
  6. Cover tightly with foil and bake for 65–70 minutes, until rice is tender and liquid is absorbed.
  7. Remove foil, sprinkle cheese evenly on top, and bake uncovered for 5–10 minutes until melted and golden.
  8. Let rest for 5–10 minutes before serving. Add toppings if desired.

Notes

Rotisserie chicken works great for saving time.

If using white rice, check for doneness around 55–60 minutes.

Add jalapeños or hot green chilies for extra spice.

Letting the casserole rest helps it set and makes serving easier.
