Ingredients
2 pounds boneless skinless chicken breasts or tenders, cut into bite-size pieces
⅓ cup cornstarch
4 tablespoons olive oil
1½ cups orange marmalade
½ cup low-sodium soy sauce
2 tablespoons white vinegar
1 teaspoon sesame oil
1 teaspoon ground ginger
3 cloves garlic, minced
½ teaspoon red pepper flakes
1 teaspoon sesame seeds
Scallions, for garnish
Instructions
Cut chicken into 1-inch pieces.
Toss chicken with cornstarch until evenly coated.
Heat olive oil in a skillet over medium-high heat.
Lightly brown chicken on all sides, without fully cooking.
Transfer chicken to a 6-quart slow cooker.
Whisk marmalade, soy sauce, vinegar, sesame oil, ginger, garlic, red pepper flakes, and sesame seeds.
Pour sauce over chicken and stir gently.
Cover and cook on LOW for 2–3 hours, stirring halfway through.
Garnish with scallions and extra sesame seeds before serving.
Notes
Browning the chicken adds flavor and helps it hold its shape.
Sauce thickens naturally as it cooks; add a splash of water if needed.
Serve over rice, quinoa, or steamed vegetables.
