Description
This Eyeball Pasta Salad is the ultimate spooky Halloween dish! Mozzarella “eyeballs,” fresh veggies, and pasta come together in a creepy yet delicious party recipe.
Ingredients
200g rotini or fusilli pasta
150g mini mozzarella balls
1 black olive (sliced into rounds for pupils)
1 cucumber, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup cherry tomatoes, halved
50g black olives, sliced
50g green olives, sliced
Fresh basil leaves, chopped
3 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp Italian seasoning
Salt & pepper, to taste
Instructions
Cook pasta according to package directions. Drain, rinse under cold water, and place in a large bowl.
Make the eyeballs by pressing black olive slices onto mozzarella balls. Set aside.
Add cucumber, peppers, cherry tomatoes, and olive slices to the pasta. Toss gently.
Whisk olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour over salad and mix well.
Top with mozzarella eyeballs and chopped basil. Chill for at least 30 minutes before serving.
Notes
Use tri-color pasta for extra Halloween flair.
Secure olive “pupils” to mozzarella balls with toothpicks if serving outdoors or at a party.
Add shredded chicken or pepperoni to make it heartier.
