Description
This Famous La Scala Chopped Salad Recipe is crisp, savory, and irresistibly satisfying. Made with finely chopped lettuce, salami, chickpeas, cheese, and a bold homemade dressing, it’s the viral Italian-style salad everyone loves.
Ingredients
Dressing
⅓ cup extra virgin olive oil
3 tablespoons apple cider vinegar
2 cloves garlic, minced
3 teaspoons Dijon mustard (or 1 teaspoon dry mustard)
½ teaspoon kosher salt
½ teaspoon black pepper
⅓ cup grated Pecorino Romano cheese or Parmesan cheese
Salad
1 head iceberg lettuce, shredded (5–6 cups)
1 head romaine lettuce, shredded (4–5 cups)
1 (15-ounce) can chickpeas, drained and rinsed
¼ lb beef salami or turkey salami, thinly sliced
2 cups shredded mozzarella cheese
Instructions
Add all dressing ingredients to a small bowl or jar and whisk until smooth, or shake well with the lid on.
In a large bowl, combine the iceberg lettuce, romaine lettuce, chickpeas, salami, and mozzarella cheese.
Pour the dressing over the salad and toss gently until everything is evenly coated.
Serve immediately for the best texture and flavor.
Notes
For meal prep, store the dressing separately and toss just before serving.
Chop everything finely so every bite has a little of everything—this is key to the classic La Scala texture.
Turkey salami works great if you want a lighter option.
