Description

A hearty, make-ahead Fireman’s Overnight Breakfast Casserole layered with sausage, eggs, cheddar, and veggies, served with rich country gravy for the ultimate cozy morning meal.

For the Casserole

  • 1 pound ground breakfast sausage

  • 4 cups sharp cheddar cheese, grated

  • 12 eggs

  • 1 large onion, chopped

  • 1 red bell pepper, chopped

  • 1 cup heavy whipping cream

  • 1/4 cup green onion, chopped

  • 8 oz sliced mushrooms

  • Kosher salt and freshly ground pepper, to taste

For the Country Gravy

  • 2 cups milk

  • 1/4 cup all-purpose flour

  • 12 tablespoons butter or oil

  • Kosher salt and freshly ground pepper, to taste


Instructions

  1. When ready to bake, preheat oven to 350°F. Lightly grease a 9×13-inch baking dish.

  2. In a large skillet over medium heat, brown the sausage. Add onions, mushrooms, and bell pepper. Cook 6–7 minutes, until softened. Stir in green onion and set aside to cool.

  3. To make the gravy, add butter or oil to the undrained skillet. Whisk in flour and cook 2 minutes. Gradually whisk in milk. Simmer 2–3 minutes until thickened. Season with salt and pepper.

  4. Crack eggs evenly into the baking dish, keeping yolks intact. Poke each yolk with a toothpick.

  5. Pour heavy cream over eggs and sprinkle with half the cheese.

  6. Spoon sausage mixture evenly on top and finish with remaining cheese. Cover and chill overnight.

  7. The next morning, bake covered for 30 minutes. Remove foil and bake 30 minutes more.

  8. Serve warm with country gravy.

  9. To reheat gravy: Thin with milk and warm in the microwave in 45-second intervals or heat gently on the stovetop.
