- 2 white onions, thinly sliced
- 3 tbsp extra virgin olive oil
- 1/4 tsp salt
- 2–3 garlic cloves, minced
- 3/4 lb farfalle pasta
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup vinegar
- 2 tbsp fresh parsley, chopped
- 1 tbsp chives, chopped
- 1 tbsp soy sauce
Instructions
- Heat olive oil in a skillet over low heat. Add sliced onions and salt. Cook slowly, stirring every few minutes, until caramelized (about 45 minutes). Add garlic during the last minute.
- Bring a large pot of salted water to a boil and cook pasta according to package directions. Drain and let cool.
- In a large bowl, mix sour cream, mayo, vinegar, parsley, chives, and soy sauce until smooth.
- Add cooled pasta to the dressing and toss to coat evenly.
- Stir in caramelized onions, reserving a small portion for garnish if desired.
- Top with extra onions, herbs, and black pepper. Serve at room temperature or chilled.

- Take your time with the onions—low and slow gives the best flavor.
- Add a splash of pasta water if the dressing feels too thick.
- Tastes even better after chilling for a few hours.
- Store leftovers in the fridge for up to 3 days.
