Description
This French Onion Pot Roast is a cozy, flavorful dinner with tender beef, caramelized onions, and cheesy baguette slices broiled to perfection. Perfect for family dinners or special gatherings.
Ingredients
3–4 lb chuck roast
2 tbsp vegetable oil
1 tsp kosher salt
½ tsp coarse ground black pepper
4 yellow onions, halved and thinly sliced
4 cups beef broth
2 tbsp Worcestershire sauce
6 sprigs fresh thyme
1 French baguette, cut into ½-inch slices
1 cup Gruyere cheese, shredded
Instructions
Preheat oven to 325°F.
Season chuck roast with salt, pepper, and thyme.
Heat vegetable oil in a Dutch oven. Brown roast 4–5 minutes per side.
Add onions, beef broth, Worcestershire sauce, and thyme. Cover and bake 3–3½ hours.
Remove thyme sprigs. Shred beef into large chunks.
Turn oven to high broil. Top beef with baguette slices and Gruyere.
Broil 1–2 minutes until cheese is bubbly and golden.
Serve immediately with broth and bread.
Notes
Browning the roast adds rich flavor—don’t skip it!
Gruyere is best, but Swiss can be substituted.
For make-ahead, store roast and broth separately. Broil with bread and cheese right before serving.
