This Garlic Beef Pasta is a cozy, slow-cooker-friendly dinner made with tender beef, garlicky sauce, and perfectly cooked pasta. It’s hearty, comforting, and ideal for busy weeknights when you want real food with minimal effort.
Ingredients
2 pounds beef chuck roast or stew meat, cut into chunks
4 garlic cloves, minced
1 teaspoon Italian seasoning
½ teaspoon onion powder
½ teaspoon paprika
1 teaspoon salt, or to taste
½ teaspoon black pepper
3 cups beef broth
1 tablespoon tomato paste
2 cups uncooked pasta (penne, rigatoni, or rotini)
½ cup grated Parmesan cheese or shredded mozzarella
2 tablespoons olive oil (optional, for browning beef)
Fresh parsley, chopped (optional, for garnish)
Instructions
(Optional) Heat olive oil in a skillet over medium-high heat. Brown beef chunks for 2–3 minutes per side for extra flavor.
Add beef to the slow cooker. Sprinkle garlic, Italian seasoning, onion powder, paprika, salt, and pepper over the meat. Stir gently.
Pour in beef broth and stir in tomato paste until combined.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until beef is tender.
About 20 minutes before serving, cook pasta in salted boiling water according to package directions. Drain.
Shred beef in the slow cooker or leave in chunks. Add cooked pasta and stir to coat with sauce.
Stir in Parmesan or mozzarella cheese until melted and creamy.
Garnish with parsley if desired and serve warm.
Notes
Browning the beef adds deeper flavor but can be skipped to save time.
If the sauce thickens too much, add a splash of warm beef broth before serving.
Mozzarella gives a milder, creamier finish, while Parmesan adds a sharper flavor.
Store leftovers in an airtight container in the fridge for up to 3 days.
