Ingredients

Scale

  • 4 1/2 tablespoons unsalted butter

  • 2 tablespoons minced garlic

  • 3 1/2 cups + 1 tablespoon all-purpose flour

  • 3 tablespoons chopped fresh parsley

  • 1 tablespoon granulated sugar

  • 2 1/4 teaspoons instant yeast

  • 1 teaspoon fine sea salt

  • 1 cup whole or 2% milk, warmed to 110°F

  • 1 large egg, room temperature

  • 1 beaten egg, for brushing tops

For the Garlic Butter Topping:

  • 2 tablespoons unsalted butter

  • 1 tablespoon minced garlic

  • 1 tablespoon chopped fresh parsley

  • Flaky sea salt, for finishing (optional)

Instructions

  1. Prep the Pan: Lightly butter a 9×13-inch baking pan and set aside.

  2. Make Garlic Butter: In a small saucepan, melt 4 1/2 tablespoons butter. Add 2 tablespoons minced garlic and sauté until fragrant (1–2 minutes). Let cool.

  3. Mix the Dry Ingredients: In a stand mixer bowl, combine flour, parsley, sugar, yeast, and salt.

  4. Form the Dough: Add the warm milk, egg, and garlic butter. Mix on low speed with dough hook for 10–12 minutes, until the dough is smooth and tacky. Add flour 1 tablespoon at a time if too sticky.

  5. Shape Rolls: Divide into 12 equal portions (about 67g each), shape into balls, and place in the pan.

  6. First Rise: Cover and let rise in a warm place for 1–2 hours until doubled in size.

  7. Bake: Preheat oven to 350°F. Brush rolls with beaten egg. Bake for 20–30 minutes or until golden brown.

  8. Finish with Garlic Butter: While baking, melt 2 tablespoons butter with 1 tablespoon garlic. Cook until fragrant. Remove from heat and stir in parsley.

  9. Serve: Brush baked rolls with garlic butter and sprinkle with flaky sea salt. Serve warm!

Notes

Measuring Tip: Use the spoon-and-level method or a kitchen scale for accurate flour measurement.

Using Active Dry Yeast? Activate in warm milk with a pinch of sugar for 5–10 minutes before adding to dough.

Make-Ahead: After shaping, cover and refrigerate overnight. Bring to room temp and let rise before baking.

Storage: Store leftovers in an airtight container for 2–3 days at room temp or freeze up to 1 month.

Reheating: Warm in oven at 350°F covered with foil or microwave for 20–30 seconds.
