3 tablespoons chopped fresh parsley
1 tablespoon granulated sugar
2 1/4 teaspoons instant yeast
1 teaspoon fine sea salt
1 cup whole or 2% milk, warmed to 110°F
1 large egg, room temperature
1 beaten egg, for brushing tops
For the Garlic Butter Topping:
2 tablespoons unsalted butter
1 tablespoon minced garlic
1 tablespoon chopped fresh parsley
Flaky sea salt, for finishing (optional)
Instructions
Prep the Pan: Lightly butter a 9×13-inch baking pan and set aside.
Make Garlic Butter: In a small saucepan, melt 4 1/2 tablespoons butter. Add 2 tablespoons minced garlic and sauté until fragrant (1–2 minutes). Let cool.
Mix the Dry Ingredients: In a stand mixer bowl, combine flour, parsley, sugar, yeast, and salt.
Form the Dough: Add the warm milk, egg, and garlic butter. Mix on low speed with dough hook for 10–12 minutes, until the dough is smooth and tacky. Add flour 1 tablespoon at a time if too sticky.
Shape Rolls: Divide into 12 equal portions (about 67g each), shape into balls, and place in the pan.
First Rise: Cover and let rise in a warm place for 1–2 hours until doubled in size.
Bake: Preheat oven to 350°F. Brush rolls with beaten egg. Bake for 20–30 minutes or until golden brown.
Finish with Garlic Butter: While baking, melt 2 tablespoons butter with 1 tablespoon garlic. Cook until fragrant. Remove from heat and stir in parsley.
Serve: Brush baked rolls with garlic butter and sprinkle with flaky sea salt. Serve warm!
