For the Meatloaf:

  • 1 ½ lbs ground chicken

  • ½ cup grated Parmesan cheese

  • ¾ cup panko breadcrumbs

  • 2 large eggs

  • 3 cloves garlic, minced

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • 1 tsp dried basil

  • 1 tsp dried parsley

  • ½ cup whole milk (or dairy-free alternative)

  • Salt and black pepper to taste

For the Glaze:

  • 2 tbsp unsalted butter

  • 2 cloves garlic, minced

  • ¼ cup grated Parmesan cheese

  • 1 tbsp fresh parsley, chopped

Optional Garnish:

  • Extra Parmesan and fresh parsley for serving


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.

  2. Mix the ingredients in a large bowl: ground chicken, Parmesan, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, herbs, salt, pepper, and milk. Combine gently—do not overmix.

  3. Shape the loaf and place it on the prepared pan or in the loaf pan.

  4. Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).

  5. Prepare the glaze: Melt butter in a small saucepan over medium heat. Add garlic and sauté for 1 minute. Stir in Parmesan and parsley until slightly thickened (2–3 minutes).

  6. Brush glaze over the cooked meatloaf and bake an additional 5–7 minutes for a golden crust.

  7. Rest 5 minutes before slicing. Garnish with extra parsley and Parmesan if desired.

Notes

Don’t overmix the meat—this keeps your meatloaf tender.
Substitute ground turkey or lean pork for variety.
