Stovetop or Slow Cooker Ingredients:

  • 1 lb sirloin steak, cut into bite-sized pieces

  • 1 lb baby potatoes, halved or quartered

  • 3 tbsp butter, divided

  • 1 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

Stovetop Instructions:

  1. Cook Potatoes: Heat a large skillet over medium. Add 1 tbsp butter + 1 tbsp olive oil. Add potatoes, season with salt, pepper, thyme, and rosemary. Cook 10–12 minutes until golden and tender. Remove and set aside.

  2. Sear Steak: Add 1 tbsp butter to skillet. Add steak bites in a single layer. Sear 2–3 minutes per side. Remove and set aside.

  3. Make Garlic Butter: Lower heat. Add remaining 1 tbsp butter + garlic. Cook 1 minute until fragrant.

  4. Combine: Return steak and potatoes; toss in garlic butter. Garnish with parsley and serve warm.

Slow Cooker Instructions:

  1. Add potatoes to slow cooker. Season with salt, pepper, rosemary, and thyme.

  2. Melt 2 tbsp butter and mix with garlic; pour over potatoes.

  3. Add steak bites on top.

  4. Cook on LOW 4–5 hours or HIGH 2–2.5 hours.

  5. Optional: Sear cooked steak in 1 tbsp butter for crispy edges; broil potatoes 3–5 minutes.

  6. Serve and garnish with parsley.

Notes

For the best sear, dry steak pieces with a paper towel before cooking.

Don’t overcrowd the skillet or the steak will steam instead of brown.

Potatoes can be broiled after slow cooking for extra crispiness.

Ribeye, NY strip, or flat iron can replace sirloin.
