  • 4 chicken fillets

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp sweet paprika

For the Cherry Tomato Sauce:

  • 1 tbsp olive oil

  • 1 tbsp unsalted butter

  • 1 shallot, finely chopped

  • 4 garlic cloves, minced

  • ¼ cup chicken broth or a squeeze of lemon juice

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp dried basil

  • 2 tbsp tomato paste

  • ½ cup chicken broth

  • 1 can (14 oz) cherry tomatoes (or crushed tomatoes)

  • 3 tbsp chopped fresh basil leaves

  • 2 mozzarella balls, cubed

  • 3 tbsp grated Parmesan

  • Crushed red pepper flakes, for sprinkling


Instructions

  1. Preheat oven to 400°F (200°C).

  2. Mince garlic, chop shallot, and cube mozzarella.

  3. Season chicken with salt, pepper, garlic powder, and paprika.

  4. Heat olive oil and butter in a large oven-safe skillet over medium-high heat. Sear chicken 5 minutes per side until golden. Remove and cover with foil.

  5. In the same skillet, sauté garlic and shallot for 2 minutes until fragrant. Deglaze with chicken broth or a squeeze of lemon juice, scraping up brown bits.

  6. Stir in salt, pepper, dried basil, and tomato paste. Cook 1 minute. Add chicken broth and canned cherry tomatoes; simmer 5 minutes.

  7. Return chicken to skillet, add basil and mozzarella. Top with Parmesan and red pepper flakes.

  8. Simmer for 5 minutes, or bake for 10 minutes until cheese melts and sauce thickens.

  9. Serve warm with pasta, rice, or crusty bread.

Notes

Add a touch of heavy cream for a creamier sauce.
