Ingredients
Cinnamon Cookie Dough
1/2 cup softened butter
1/2 cup vegetable oil
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 1/2 cups all-purpose flour
Cinnamon Streusel
1/4 cup softened butter
1/4 cup brown sugar
1/3 to 1/2 cup flour
1/2 teaspoon cinnamon
Pinch of salt
Vanilla Glaze
1/2 cup powdered sugar
1 tablespoon milk
Splash of vanilla extract
Instructions
Preheat oven to 350°F (175°C).
In a mixing bowl, beat butter, oil, and brown sugar until creamy.
Add egg and vanilla, mixing well.
Add dry ingredients and stir until a soft dough forms.
In another bowl, prepare streusel by mixing butter, brown sugar, flour, cinnamon, and salt until crumbly.
Scoop large dough balls onto a lined baking sheet.
Press a small indentation in each cookie and fill with streusel.
Bake for 10–12 minutes, until edges are lightly golden.
Whisk together glaze ingredients and drizzle over warm cookies.
Cool slightly and enjoy!
Notes
Add 1–2 tablespoons extra flour to the streusel if it feels too wet.
For softer cookies, slightly underbake; they’ll continue firming while cooling.
Add chopped nuts to the streusel for extra crunch.
Store in an airtight container for up to 3 days.
