Ingredients
For the Bread
1 3/4 cups all-purpose flour
1 cup old-fashioned oats
1/4 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons baking powder
1 cup granulated sugar
3/4 cup vegetable oil
2 large eggs, beaten
1/2 cup plain nonfat Greek yogurt
1 cup applesauce
1 teaspoon vanilla extract
For the Glaze
2/3 cup powdered sugar
1/4 cup applesauce
Instructions
Preheat oven to 350°F. Grease two 8 1/2 x 4 1/2-inch loaf pans.
In a large bowl, combine flour, oats, salt, cinnamon, and baking powder. Stir to mix.
In a separate bowl, whisk together sugar, oil, eggs, Greek yogurt, applesauce, and vanilla until smooth.
Gently fold the dry ingredients into the wet ingredients until just combined (about 15 strokes). Do not overmix.
Divide batter evenly between the two loaf pans.
Bake for 41–45 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
Cool in pans for 5 minutes, then transfer to a wire rack.
Whisk powdered sugar and applesauce together until smooth.
Spoon glaze evenly over both loaves. Allow glaze to set completely before slicing.
Notes
Do not overmix — this keeps the bread tender.
You can reduce the sugar slightly if using sweetened applesauce.
Sour cream can be substituted for Greek yogurt.
Works well as muffins (bake 18–22 minutes).
Can be made as one large loaf (increase bake time to 55–60 minutes).
Let bread sit a few hours if you detect any slight baking powder bitterness — flavor deepens beautifully.
