Ingredients
8 ounces rice noodles or gluten-free spaghetti
2 teaspoons sesame oil
1 tablespoon red curry paste
2 cloves garlic, chopped
Pinch of chili flakes, optional
1/4 cup vegetable broth
3 tablespoons creamy unsalted peanut butter
1/2 cup coconut milk
1 tablespoon coconut sugar
1 tablespoon coconut aminos or tamari
Juice of 1/2 lime
Fresh cilantro, for garnish
Green onions, for garnish
Chopped peanuts and/or sesame seeds, for topping
Instructions
Cook noodles according to package directions. Drain and rinse with cold water to prevent sticking. Set aside.
Heat sesame oil in a large skillet over medium heat. Add red curry paste and cook for 1 minute until fragrant.
Stir in garlic and chili flakes if using, cooking for another minute.
Add coconut milk, vegetable broth, peanut butter, coconut sugar, coconut aminos, and lime juice. Whisk until smooth.
Bring sauce to a gentle simmer and cook until slightly thickened.
Add cooked noodles to the skillet and toss until evenly coated and warmed through.
