Description
Greek Chicken with Lemon and Feta is a quick, flavorful dinner made with juicy chicken, fresh lemon, garlic, herbs, and creamy feta. Perfect for busy weeknights.
Ingredients
1 lemon, juiced and zested
¼ cup extra virgin olive oil
3 garlic cloves, finely minced (or 1 tsp garlic powder)
1 tsp dried oregano
½ tsp smoked paprika
½ tsp sea salt, plus a pinch
¼ tsp coarse black pepper
1 pound thin-sliced chicken breast
Garnish
¼ cup feta cheese, crumbled
¼ cup fresh parsley, chopped
Lemon wedges, for serving
Instructions
In a large mixing bowl, whisk together lemon zest, lemon juice, olive oil, garlic, oregano, smoked paprika, salt, and pepper.
Reserve ¼ cup of the marinade and set aside.
Add the chicken to the remaining marinade and toss to coat evenly. Cover and refrigerate for 30 minutes.
Heat a nonstick skillet over medium-high heat and lightly oil the pan.
Cook the chicken until golden brown on the first side, then flip and cook 3–4 minutes more until fully cooked.
Transfer chicken to a serving plate, drizzle with reserved marinade, and garnish with feta, parsley, and lemon wedges.
Serve warm.
Notes
Thin chicken breasts cook faster and stay juicy.
Do not overcook to avoid dryness.
Feta is best added after cooking to keep its creamy texture.
