Description
Golden baby potatoes roasted until crispy, finished with tangy feta, bright lemon zest, and fragrant oregano. This easy Greek-inspired side dish is comforting, fresh, and packed with Mediterranean flavor.
Ingredients
2 pounds baby potatoes, halved or quartered
3 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
¾ cup feta cheese, crumbled
Zest of 1 lemon
Juice of 1 lemon
¼ cup fresh parsley, chopped (for garnish)
Instructions
Preheat the oven to 425°F.
In a large bowl, toss the potatoes with olive oil, oregano, garlic powder, salt, and black pepper until evenly coated.
Spread the potatoes in a single layer on a baking sheet.
Roast for 30–35 minutes, flipping halfway, until golden and crispy.
Remove from the oven and sprinkle feta cheese evenly over the potatoes.
Return to the oven and roast for 5–10 minutes, until the feta is soft and lightly golden.
Drizzle with lemon juice and sprinkle with lemon zest.
Garnish with fresh parsley and serve warm.
Notes
Add chopped olives or sun-dried tomatoes for extra Mediterranean flavor.
For extra crispiness, broil for 1–2 minutes at the end.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
