  • 250 g cheddar cheese, freshly grated

  • 2 tablespoons all-purpose flour

  • 2 tablespoons butter

  • 1 ½ cups milk (whole or skim)

  • 1 cup full-fat plain Greek yogurt

  • ¼ teaspoon salt

  • ⅛ teaspoon ground black pepper


Instructions

  1. Cook the elbow pasta according to package directions until al dente. Drain well and set aside.

  2. In a medium pot over medium heat, melt the butter.

  3. Add the flour and whisk constantly for about 30 seconds to form a smooth roux.

  4. Slowly pour in the milk while whisking. Cook for 1–2 minutes until the mixture thickens.

  5. Lower the heat slightly and stir in the Greek yogurt.

  6. Add the grated cheddar cheese and stir until fully melted and creamy, about 3 minutes.

  7. Add the cooked pasta to the sauce and stir to coat evenly.

  8. Season with salt and black pepper to taste.

  9. Serve immediately while warm and creamy.

Notes

Freshly grated cheese melts smoother than pre-shredded cheese.

Use full-fat Greek yogurt for the creamiest texture.

If the sauce thickens too much, stir in a splash of warm milk before serving.
