Description

Grilled Mediterranean Chicken Tacos are a quick and flavorful 30-minute meal made with juicy marinated chicken, fresh veggies, feta, and creamy tzatziki wrapped in warm pita.


Ingredients

1 lb chicken breast, cut into 1-inch chunks

2.5 tbsp olive oil

2.5 tbsp lemon juice

2 garlic cloves, minced

2 tsp oregano

1/2 tsp paprika

1 tsp salt

1/2 tsp pepper

1/4 tsp red pepper flakes

1.25 cups cucumbers, diced

1 cup tomatoes, seeded and diced

1 cup bell pepper, chopped

1/4 cup red onion, finely chopped

2 tbsp parsley, chopped

3/4 cup feta cheese, crumbled

1 tbsp lemon juice

Salt and pepper to taste

8 pitas

1/2 cup tzatziki sauce


Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and red pepper flakes. Add chicken and toss to coat.

  2. Let the chicken marinate for at least 20 minutes (optional but recommended).

  3. In another bowl, combine cucumbers, tomatoes, bell pepper, red onion, parsley, and feta. Add lemon juice, salt, and pepper, then toss gently.

  4. Heat a grill or grill pan over medium-high heat. Cook chicken for 8–10 minutes, turning occasionally, until fully cooked and slightly charred.

  5. Warm the pitas in a skillet or microwave.

  6. Assemble tacos by adding grilled chicken, Mediterranean salad, and a drizzle of tzatziki. Serve immediately.

Notes

Chicken thighs can be used instead of chicken breast for extra juiciness.

Marinating longer (up to 2 hours) enhances flavor.

Add olives or lettuce for extra texture.

Store leftovers separately for best freshness.
