Description

These festive Grinch Mini Cheesecakes are creamy, bright, and irresistibly fun for the holidays. Made with an Oreo crust, smooth green cheesecake filling, and fluffy whipped cream, they’re the perfect easy Christmas dessert for parties, gifting, or family movie nights.

  • 1 cup Oreo crumbs

  • 2 1/2 tbsp butter, melted

Cheesecake

  • 2 (8 oz) cream cheese blocks, softened

  • 1/2 cup sugar

  • 2 eggs

  • 1 tsp vanilla

  • Neon green food coloring

Optional Toppings

  • Whipped cream

  • Sprinkles or red candy berries


Instructions

  1. Preheat oven to 350°F and line a cupcake pan with liners.

  2. Pulse 10–11 Oreos in a food processor until fine. Add melted butter and pulse again.

  3. Divide the crumbs evenly into cupcake liners and press firmly to form the crust.

  4. In a medium bowl, beat softened cream cheese and sugar until smooth.

  5. Add eggs and vanilla; mix until just combined.

  6. Add neon green food coloring to reach your desired Grinch hue.

  7. Spoon about 1/4 cup of cheesecake batter into each liner.

  8. Bake for 15–17 minutes, or until centers are slightly jiggly.

  9. Cool completely in the pan, then refrigerate until firm.

  10. Top with whipped cream and red sprinkles or candy berries before serving.

Notes

Soften your cream cheese fully to avoid lumps.

If the centers sink slightly after cooling, that’s normal—topping covers it perfectly.

These mini cheesecakes freeze well for up to 2 months.
