Description

These Ground Turkey Stuffed Sweet Potatoes are the perfect healthy comfort food—packed with lean protein, black beans, and smoky spices, all nestled in naturally sweet baked potatoes.


Ingredients

  • 4 medium sweet potatoes

  • 1 tbsp olive oil

  • 1 small onion, finely diced

  • 3 cloves garlic, minced

  • 1 lb ground turkey

  • 1 tsp smoked paprika

  • 1 tsp chili powder

  • 1 tsp ground cumin

  • 1 tsp sea salt

  • ½ tsp black pepper

  • 1 cup canned black beans, drained and rinsed

  • 1 cup canned corn, drained

  • 1 cup diced tomatoes (canned or fresh)

  • ½ cup shredded cheddar or Mexican blend cheese

  • Fresh cilantro, chopped (for garnish)

  • Optional toppings: plain Greek yogurt or sour cream, diced red onion, lime wedges


Instructions

  1. Bake the Sweet Potatoes: Preheat oven to 400°F. Wash sweet potatoes, pierce with a fork, and bake 45–50 minutes until tender.

  2. Cook the Aromatics: In a skillet, heat olive oil over medium heat. Sauté onion for 3–4 minutes until translucent, then add garlic for 30 seconds.

  3. Brown the Turkey: Add ground turkey, breaking it apart. Cook 5–7 minutes until browned. Stir in paprika, chili powder, cumin, salt, and pepper.

  4. Add Veggies: Mix in black beans, corn, and diced tomatoes. Simmer 5–7 minutes, letting flavors combine.

  5. Prepare Potatoes: Slice each baked potato lengthwise. Gently mash the inside with a fork to make room for filling.

  6. Stuff and Melt: Spoon the turkey mixture into each potato, top with cheese, and bake 5 minutes until melted. Garnish with cilantro and toppings.

Notes

Swap turkey for ground chicken or plant-based meat for variety.
