Ingredients
4 medium sweet potatoes
1 tbsp olive oil
1 small onion, finely diced
3 cloves garlic, minced
1 lb ground turkey
1 tsp smoked paprika
1 tsp chili powder
1 tsp ground cumin
1 tsp sea salt
½ tsp black pepper
1 cup canned black beans, drained and rinsed
1 cup canned corn, drained
1 cup diced tomatoes (canned or fresh)
½ cup shredded cheddar or Mexican blend cheese
Fresh cilantro, chopped (for garnish)
Optional toppings: plain Greek yogurt or sour cream, diced red onion, lime wedges
Instructions
Bake the Sweet Potatoes: Preheat oven to 400°F. Wash sweet potatoes, pierce with a fork, and bake 45–50 minutes until tender.
Cook the Aromatics: In a skillet, heat olive oil over medium heat. Sauté onion for 3–4 minutes until translucent, then add garlic for 30 seconds.
Brown the Turkey: Add ground turkey, breaking it apart. Cook 5–7 minutes until browned. Stir in paprika, chili powder, cumin, salt, and pepper.
Add Veggies: Mix in black beans, corn, and diced tomatoes. Simmer 5–7 minutes, letting flavors combine.
Prepare Potatoes: Slice each baked potato lengthwise. Gently mash the inside with a fork to make room for filling.
Stuff and Melt: Spoon the turkey mixture into each potato, top with cheese, and bake 5 minutes until melted. Garnish with cilantro and toppings.
Notes
Swap turkey for ground chicken or plant-based meat for variety.
The filling can be made ahead and stored in the fridge for 3–4 days.
For meal prep, store filling and baked potatoes separately for best texture.
