For the Rice:

  • 2 cups white medium grain rice

  • 2 cups water

For the Brown Gravy:

  • 2 cups beef stock

  • 3 tablespoons cornstarch

  • 1 teaspoon onion powder

  • 1 teaspoon shoyu (soy sauce)

  • 1 teaspoon beef bouillon paste

  • 1 tablespoon heavy cream

For the Burger Patties:

  • 2 pounds ground beef

  • 1 egg

  • ¼ cup onion, diced

  • ¼ cup panko breadcrumbs

  • 2 tablespoons ketchup

  • 2 tablespoons mayonnaise

  • Salt and pepper, to taste

For the Eggs:

  • 6 large eggs

  • Cooking oil of choice

  • Salt and pepper, to taste


Instructions

  1. Cook the Rice: Rinse rice under cool water until it runs clear. Add rice and water to a rice cooker and cook until done (or use stovetop method).

  2. Make the Gravy: In a saucepan, whisk together beef stock, cornstarch, onion powder, shoyu, and beef bouillon paste. Cook over medium heat until thickened. Remove from heat and stir in heavy cream.

  3. Prepare the Burger Patties: In a large bowl, combine ground beef, egg, onion, panko, ketchup, mayonnaise, salt, and pepper. Mix gently and shape into patties. Cook in a skillet over medium-high heat until browned and fully cooked, flipping once.

  4. Cook the Eggs: Heat oil in a pan. Crack eggs into the pan, season with salt and pepper, and cook sunny-side-up (or over-easy if preferred).

  5. Assemble the Loco Moco: Place a scoop of rice on each plate, top with a burger patty, pour over the gravy, and crown with a fried egg. Serve hot.

Notes

Use medium-grain rice for authentic Hawaiian texture.
Add more stock if gravy becomes too thick.
Patties can be prepped ahead of time and stored in the fridge.
Runny yolks add extra creaminess, but you can cook eggs fully if preferred.
