Description

Healthy Greek Ground Chicken Bowls are a fresh, protein-packed dinner made with lemon herb ground chicken, crisp cucumber salsa, and creamy dairy-free tzatziki over rice or cauliflower rice. This easy 30-minute meal is gluten-free, dairy-free, and perfect for meal prep.

For the Greek Salsa

  • ½ cucumber, diced

  • ¼ red onion, diced

  • ¼ cup kalamata olives, sliced

  • Juice of ½ lemon

  • 2 teaspoons fresh dill, chopped

  • 1 tablespoon fresh parsley, chopped

  • Salt and pepper to taste

For the Tzatziki

  • 1 cup coconut yogurt

  • 3 tablespoons diced cucumber

  • 2 teaspoons fresh dill

  • 1 teaspoon garlic powder

  • Juice of ¼ lemon

  • Pinch of salt

For the Chicken Bowls

  • 2 teaspoons olive oil

  • 1 pound ground chicken

  • 2 teaspoons garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried oregano

  • 1 teaspoon dried dill

  • 1 tablespoon chopped parsley

  • Juice of ½ lemon

  • Salt and pepper to taste

  • Cooked rice or cauliflower rice, for serving


Instructions

  1. In a bowl, combine cucumber, red onion, olives, lemon juice, dill, parsley, salt, and pepper. Mix well and refrigerate.

  2. In a separate bowl, stir together coconut yogurt, cucumber, dill, garlic powder, lemon juice, and salt. Chill until ready to use.

  3. Heat olive oil in a skillet over medium heat. Add ground chicken and cook, breaking it apart, until no longer pink.

  4. Stir in garlic powder, onion powder, oregano, dill, parsley, lemon juice, salt, and pepper. Cook another 1–2 minutes until well combined.

  5. Divide rice or cauliflower rice into 4 bowls. Top with seasoned chicken, Greek salsa, and a generous spoonful of tzatziki. Serve immediately.

Notes

Swap rice for cauliflower rice for a lower-carb option.

Cassava orzo can be used for a grain-free alternative.

For meal prep, store chicken and rice separately from salsa and tzatziki. Keeps fresh for 2–3 days in the refrigerator.

Omit black pepper for AIP modification.
