Description
This Heart Shaped Cookie Cake is a soft, chewy cookie-meets-cake dessert loaded with chocolate, candy, and topped with fluffy pink buttercream. Perfect for parties, or any sweet celebration.
Ingredients
Cookie Cake
¾ cup unsalted butter, softened
¾ cup light brown sugar, packed
¼ cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
½ teaspoon kosher salt
1 cup semi-sweet chocolate chips
½ cup semi-sweet chocolate chunks
½ cup red and white M&M’s
½ cup pink and white heart sprinkles
Frosting
1½ cups unsalted butter, softened
3 cups powdered sugar
4 tablespoons heavy whipping cream
2 teaspoons vanilla extract
Pink gel food coloring, a few drops
Instructions
Preheat the oven to 350°F and generously spray a 9-inch heart-shaped cake pan with non-stick baking spray.
In a stand mixer, cream the butter, brown sugar, and granulated sugar until light and fluffy.
Mix in the egg and vanilla extract until fully combined.
In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
Slowly add the dry ingredients to the wet ingredients, mixing just until combined.
Fold in the chocolate chips, chocolate chunks, and M&M’s by hand.
Press the dough evenly into the prepared pan and sprinkle the top with heart sprinkles.
Bake for 20–25 minutes, until the edges are lightly golden.
Remove from the oven and let the cookie cake cool completely before frosting.
Frosting & Decorating
Beat butter, powdered sugar, heavy cream, and vanilla until smooth and fluffy.
Mix in pink food coloring until desired color is reached.
Transfer frosting to a piping bag and decorate the edges of the cooled cookie cake.
Add extra sprinkles or write a message if desired.
Notes
Let the cookie cake cool completely before frosting to prevent melting.
This recipe makes extra frosting; you’ll likely use about half.
For gluten-free, substitute all-purpose flour with a gluten-free all-purpose blend.
