This Hearty Comfort Slow Cooker Beef Manhattan is the ultimate cozy, hands-off meal. Tender shredded beef, rich brown gravy, and creamy mashed potatoes come together for a classic comfort dish that practically cooks itself.
Ingredients
2 lbs beef chuck roast, trimmed
1 large onion, sliced
2 cups beef broth
1 packet brown gravy mix (about 1 oz)
1 tablespoon Worcestershire sauce
3 cups mashed potatoes, prepared
1 teaspoon garlic powder
Salt and black pepper, to taste
2 tablespoons cornstarch (optional, for thickening)
Instructions
Season the beef chuck roast with salt, black pepper, and garlic powder.
Place sliced onions into the bottom of the slow cooker. Set the roast on top.
Whisk together beef broth, brown gravy mix, and Worcestershire sauce. Pour over the roast.
Cover and cook on LOW for 8 hours, or until the beef is fork-tender.
Optional: remove beef, whisk in a cornstarch slurry to thicken the gravy, then return shredded beef to the slow cooker.
Serve beef and gravy over warm mashed potatoes.

Searing the roast before slow cooking adds extra depth of flavor.
