Description

These High Protein Slow Cooker Garlic Butter Beef Bites with tender baby potatoes are the perfect cozy, hands-off dinner. Juicy seared beef, a rich garlic-butter sauce, and melt-in-your-mouth potatoes come together for an effortless, comforting meal the whole family will love.


Ingredients

  • 1.5 lbs beef stew meat, cut into bite-sized pieces

  • 1 lb baby potatoes, halved

  • 4 tbsp unsalted butter, melted

  • 3 cloves garlic, minced

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • ½ tsp dried thyme

  • ½ tsp dried rosemary

  • ½ tsp salt (or to taste)

  • ¼ tsp black pepper

  • ¼ cup beef broth

  • 1 tbsp olive oil (for searing)


Instructions

  1. Prep the beef by cutting it into bite-sized pieces and halving the baby potatoes.

  2. (Optional) Parboil the potatoes for 3–4 minutes to speed up cooking.

  3. Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides.

  4. In a small bowl, mix together the melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.

  5. Place the potatoes in the slow cooker first, then add the seared beef.

  6. Pour the garlic butter mixture over the top and add the beef broth.

  7. Cook on LOW 6–8 hours or HIGH 3–4 hours, until beef is fork-tender.

  8. Let rest 10 minutes before serving.

Notes

For extra depth of flavor, add 1 tablespoon Worcestershire sauce to the broth.

If you prefer crispier potatoes, broil them for 3–5 minutes after cooking.

Chuck roast also works well instead of stew meat.

Leftovers keep 3–4 days in the fridge.
