Description

Ingredients

  • 1½ cups cottage cheese

  • 2 cups broccoli florets

  • 1 bell pepper, diced

  • 1 medium zucchini, sliced

  • 1 cup cherry tomatoes, halved

  • 1 cup fresh spinach, finely chopped

  • ½ small red onion, finely chopped

  • 1 cup shredded mozzarella cheese

  • 3 large eggs

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon dried oregano

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Cooking spray or olive oil for greasing


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.

  2. In a large bowl, mix cottage cheese, broccoli, bell pepper, zucchini, cherry tomatoes, spinach, and red onion.

  3. In a separate bowl, whisk eggs, olive oil, garlic powder, onion powder, oregano, salt, and pepper.

  4. Pour egg mixture over vegetables and stir until evenly combined.

  5. Transfer mixture to the prepared baking dish and spread evenly.

  6. Sprinkle shredded mozzarella over the top.

  7. Bake for 30–35 minutes, until golden and set in the center.
