Description

This Honey Lime Chicken and Avocado Rice Stack is a fresh, feel-good meal layered with sweet honey-glazed chicken, fluffy cilantro-lime rice, and creamy avocado. It’s bright, zesty, and easy enough for busy weeknights but fancy enough to impress guests!

For the Chicken:

  • 1 lb boneless, skinless chicken breasts

  • 1/4 cup honey

  • 2 tablespoons lime juice

  • 1 teaspoon lime zest

  • 2 cloves garlic, minced

  • Salt and pepper to taste

For the Rice:

  • 1 cup cooked white or brown rice

  • 1/4 cup chopped cilantro

  • 1 tablespoon lime juice

  • Salt to taste

For the Avocado Layer:

  • 2 ripe avocados, sliced

  • 1 tablespoon lime juice

  • Salt and pepper to taste


Instructions

  1. Prepare the Chicken:
    Season chicken with salt and pepper on both sides. In a bowl, whisk together honey, lime juice, lime zest, and minced garlic.
    Heat a skillet over medium-high heat with a drizzle of oil. Cook chicken for 6–7 minutes per side or until golden brown and cooked through (165°F). During the last 2 minutes, brush the honey-lime glaze on top to caramelize. Remove and rest 5 minutes before slicing.

  2. Prepare the Rice:
    In a medium bowl, combine cooked rice, cilantro, lime juice, and salt. Mix gently and set aside.

  3. Prepare the Avocado:
    Slice avocados and toss with lime juice, salt, and pepper to prevent browning.

  4. Assemble the Stack:
    Using a round mold or large cookie cutter, layer the rice on the bottom, avocado in the middle, and sliced chicken on top.
    Carefully remove the mold and drizzle any leftover honey-lime glaze over the plate before serving.

Notes

No mold? No problem! Stack it freestyle — rustic looks beautiful too.
For a spicy twist, add a pinch of chili flakes to the glaze.
You can prep the rice and chicken ahead for faster assembly.
Works great with brown rice or quinoa for extra nutrition.
