Description

This Honeycrisp Apple Broccoli Salad is crisp, refreshing, and bursting with flavor. Fresh broccoli, sweet apples, tangy cranberries, and creamy dressing come together for a healthy side dish you’ll love serving at weeknight dinners, potlucks, or holiday tables.


Ingredients

  • 4 cups fresh broccoli florets

  • 2 Honeycrisp apples, diced

  • 1/4 cup red onion, finely chopped

  • 1/3 cup sunflower seeds

  • 1/2 cup dried cranberries

  • 1/2 cup Greek yogurt (or mayonnaise)

  • 2 tbsp honey (or maple syrup)

  • 1 1/2 tbsp apple cider vinegar

  • Salt & pepper, to taste


Instructions

  1. Chop the broccoli into bite-sized florets, dice the apples, and finely chop the red onion.

  2. In a large mixing bowl, combine broccoli, apples, onion, sunflower seeds, and cranberries.

  3. In a separate bowl, whisk together Greek yogurt (or mayo), honey (or maple syrup), apple cider vinegar, salt, and pepper until smooth.

  4. Pour the dressing over the salad mixture and gently toss until evenly coated.

  5. Refrigerate for at least 30 minutes before serving to allow the flavors to blend.

Notes

Swap sunflower seeds for pumpkin seeds or almonds for variety.
Honeycrisp apples are best, but Fuji or Gala also work.
For dairy-free, use vegan mayo or dairy-free yogurt.
