Description
Irish Flag Clementine Cucumber Salad is a bright, refreshing 30-minute salad made with sweet clementines, crisp cucumbers, creamy avocado, goat cheese, and pistachios. Perfect for St. Patrick’s Day or a fresh spring side dish.
Ingredients
Salad
10 cups mixed fresh greens (spinach, arugula, romaine, spring mix, or mesclun)
6 medium clementines, peeled and sliced
2–3 mini cucumbers, thinly sliced
1 ripe avocado, sliced
¼ medium white onion, thinly sliced
⅓ cup crumbled goat cheese
⅓ cup salted roasted pistachios, shelled
Freshly ground black pepper, to taste
Dressing
2–3 tablespoons Honey White Balsamic Dressing (or regular balsamic if preferred)
Instructions
Place the fresh greens in a large serving bowl or on a large platter.
Arrange the sliced clementines, cucumbers, avocado, and white onion over the greens.
Drizzle 2–3 tablespoons of Honey White Balsamic Dressing lightly over the salad.
Toss gently to combine, being careful not to mash the avocado.
Sprinkle with goat cheese and pistachios.
Finish with freshly ground black pepper.
Serve immediately with extra dressing on the side.
Notes
Regular balsamic vinegar can be used instead of white balsamic.
Feta cheese can be substituted for goat cheese.
For best texture, add avocado just before serving.
If making ahead, store dressing separately and toss before serving.
