This creamy, cheesy Keto Crack Chicken in the Crock Pot is the ultimate low-carb comfort food. Packed with ranch flavor, crispy bacon, and melted cheddar, it’s a family-friendly dinner that practically cooks itself!
Ingredients
2 lbs boneless, skinless chicken breasts (or thighs, thawed)
1 cup chicken broth (low-sodium if preferred)
1 Hidden Valley Ranch seasoning packet
8 oz full-fat cream cheese, cut into chunks
1 cup cooked, crumbled bacon
1 ½ cups shredded cheddar cheese (medium or sharp)
Instructions
Spray or line your crock pot for easy cleanup.
Place chicken breasts in a single layer in the slow cooker.
Pour chicken broth over the chicken and sprinkle ranch seasoning on top.
Add cream cheese chunks over the chicken.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Once cooked, shred the chicken with two forks inside the crock pot.
Stir in crumbled bacon and shredded cheddar cheese until creamy and melted.
Serve over cauliflower rice, in lettuce wraps, or with your favorite low-carb sides.
Notes
