These Key Lime Truffles are creamy, citrusy bite-sized desserts made with white chocolate, real lime zest, and a crisp graham cracker coating. Inspired by classic key lime pie, they’re sweet, tangy, and perfect for parties, gifting, or an easy make-ahead treat.
Ingredients
¼ cup heavy whipping cream
¼ cup sweetened condensed milk
4 tablespoons lime zest
2 cups white chocolate chips
2 tablespoons lime juice
1 tablespoon unsalted butter, softened
2 cups crushed graham crackers
Instructions
In a medium pot over medium heat, combine heavy whipping cream, sweetened condensed milk, and lime zest.
Bring to a gentle simmer, then remove from heat and let steep for 30 minutes.
Return mixture to the stove and bring back to a light simmer.
Whisk in white chocolate chips, butter, and lime juice until smooth and fully melted.
Pour mixture into a bowl, cover with plastic wrap, and refrigerate until firm (at least 30 minutes or overnight for best results).
Using a tablespoon, scoop and roll mixture into balls.
Roll each truffle in crushed graham crackers until fully coated.
Serve chilled and enjoy.
Notes
For easier rolling, refrigerate overnight.
If the mixture is too soft, chill longer before shaping.
Cinnamon graham crackers add extra flavor depth.
For less sweetness, strain out the lime zest before adding chocolate.
Store in an airtight container in the refrigerator up to 5 days.
Freeze up to 2 months.
