This Lemon Capellini Salad Recipe is a light, refreshing pasta dish made with tender capellini, fresh lemon juice, juicy tomatoes, and briny capers. It’s quick to prepare and perfect for busy weeknights, picnics, or a simple make-ahead lunch.
Ingredients
Scale
- 8 oz capellini pasta (or angel hair pasta)
- Juice of 2 medium lemons
- 1 tsp lemon zest
- 3 tbsp extra virgin olive oil
- 1 ½ tsp garlic salt
- ½ tsp black pepper
- ½ cup diced tomatoes (seeds removed)
- 3 tbsp capers (drained)
- 1 tbsp curly leaf parsley (finely chopped)
Instructions
- Bring a large pot of salted water to a boil and cook the capellini pasta until tender, about 3–5 minutes.
- Drain the pasta and rinse under cool water to stop the cooking process. Set aside.
- In a large bowl, whisk together lemon juice, lemon zest, olive oil, garlic salt, and black pepper.
- Add the cooled pasta, diced tomatoes, and capers to the bowl. Toss gently to combine.
- Stir in the chopped parsley and give it one final toss.
- Serve immediately or chill in the refrigerator before serving.
Notes
- Use fresh lemon juice for the best flavor.
- Do not overcook the pasta—it cooks quickly and can become mushy.
- Chill for 30 minutes before serving for enhanced flavor.
- Add grilled chicken or shrimp for extra protein.
