  • ½ tsp black pepper
  • ½ cup diced tomatoes (seeds removed)
  • 3 tbsp capers (drained)
  • 1 tbsp curly leaf parsley (finely chopped)

Instructions

  1. Bring a large pot of salted water to a boil and cook the capellini pasta until tender, about 3–5 minutes.
  2. Drain the pasta and rinse under cool water to stop the cooking process. Set aside.
  3. In a large bowl, whisk together lemon juice, lemon zest, olive oil, garlic salt, and black pepper.
  4. Add the cooled pasta, diced tomatoes, and capers to the bowl. Toss gently to combine.
  5. Stir in the chopped parsley and give it one final toss.
