This Lemon Chicken and Veggie Orzo Stir Fry is a quick, bright, and comforting dinner made with juicy chicken, tender orzo, and colorful veggies tossed in fresh lemon flavor. Perfect for busy weeknights when you want something easy but satisfying.
Ingredients
1 pound boneless, skinless chicken breast, diced
1 cup orzo pasta
2 cups mixed vegetables (bell peppers, carrots, broccoli, or zucchini)
2 tablespoons olive oil
2 cloves garlic, minced
1 lemon, zested and juiced
1 teaspoon oregano
Salt and pepper, to taste
¼ cup chicken broth (low sodium preferred)
Optional: fresh parsley, chopped
Instructions
Bring a medium pot of salted water to a boil. Add orzo and cook according to package directions. Drain and set aside.
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and oregano. Cook until golden and fully cooked, about 5–7 minutes. Remove from skillet.
Add remaining olive oil to the same skillet. Add garlic and vegetables. Cook for 3–4 minutes until tender but still colorful.
Return chicken to the skillet. Add cooked orzo, lemon juice, lemon zest, and chicken broth. Stir well and cook for 2–3 minutes until everything is heated through.
Taste and adjust seasoning if needed.
Serve warm and garnish with fresh parsley if desired.
Notes
Swap in any vegetables you have on hand.
Add extra lemon juice for a brighter flavor.
A splash of broth helps loosen the dish when reheating leftovers
