Ingredients
Lemon Cream Filling
4 oz cream cheese
2 tbsp unsalted butter
1½ cups powdered sugar
2 tbsp lemon juice
½ tsp lemon zest
Pinch of salt
Cookie Dough
1 cup unsalted butter, softened
½ cup powdered sugar
1 tsp vanilla extract
2 cups all-purpose flour
¼ tsp salt
2 tsp lemon zest
For Rolling
Powdered sugar for coating
Instructions
In a bowl, beat cream cheese and butter until smooth. Add powdered sugar, lemon juice, lemon zest, and salt. Mix until creamy. Chill for 30 minutes.
In another bowl, cream softened butter and powdered sugar until fluffy. Mix in vanilla and lemon zest.
Add flour and salt, stirring until the dough comes together.
Scoop 1 tablespoon of dough, flatten it, and add ½ teaspoon of chilled filling in the center. Roll gently into a ball.
Place dough balls on a lined baking sheet and bake at 350°F (175°C) for 12–14 minutes.
Let cookies cool for 5 minutes, then roll in powdered sugar. Cool fully and roll again for a snowy finish.
Notes
Chilling the filling prevents leaks during baking.
Double-rolling in powdered sugar gives the iconic “snowball” look.
Dough that feels crumbly comes together quickly with a few seconds of hand-warming.
Cookies stay soft for several days in an airtight container and freeze beautifully.
