Description

Ingredients

  • 1 package (8.5 oz) cornbread mix

  • 1 cup sour cream

  • 1 can (15 oz) cream-style corn

  • 1 can (4 oz) green chilies, drained

  • 1 cup shredded cheddar cheese, divided

  • 1/2 cup cooked bacon, chopped

  • 1/2 cup green onions, diced

  • 2 eggs

  • 1/4 cup melted butter

  • Salt and pepper, to taste

Optional: diced jalapeños or pepper jack cheese for extra heat.


Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, mix the cornbread mix, sour cream, cream-style corn, green chilies, half of the cheddar cheese, bacon, green onions, eggs, and melted butter. Season with salt and pepper.

  3. Grease a cast-iron skillet or a 9×9-inch baking dish. Pour in the batter and smooth the top.

  4. Sprinkle the remaining cheddar cheese evenly over the top.

  5. Bake for 25–30 minutes, or until golden brown and set in the center.

  6. Let cool for a few minutes before slicing and serving.
