Ingredients

  • 10 slices thick-cut bacon

  • 2 lb ground beef (80/20 recommended)

  • 1 medium yellow onion, diced

  • 3 cloves garlic, minced

  • 1 tsp kosher salt (plus more to taste)

  • 1/2 tsp black pepper

  • 1 tsp smoked paprika

  • 6 large eggs

  • 1 cup heavy cream

  • 2 cups shredded sharp cheddar cheese, divided

  • Optional for serving: chopped pickles, diced tomatoes, shredded lettuce, mustard, sugar-free ketchup, chopped parsley


Instructions

  1. Prep oven & dish: Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish.

  2. Cook bacon: In a large skillet, cook bacon until crispy. Transfer to paper towels, then crumble. Leave about 1 tablespoon bacon grease in the skillet.

  3. Brown beef: Add ground beef, onion, and garlic to the skillet. Cook until beef is browned and onions are softened. Drain excess grease if needed. Season with salt, pepper, and smoked paprika.

  4. Layer: Spread beef mixture evenly in the casserole dish. Sprinkle with 1 cup cheddar and half the bacon.

  5. Make custard: In a bowl, whisk eggs and heavy cream until smooth. Pour evenly over the beef layer.

  6. Top & bake: Sprinkle with remaining 1 cup cheddar and the rest of the bacon. Bake 30–35 minutes, uncovered, until the center is set and the top is bubbly and golden.

  7. Rest & serve: Rest 5–10 minutes before slicing. Add your favorite burger toppings and enjoy!

Notes

Beef tip: 80/20 gives the juiciest casserole. If using lean beef, add a splash more cream or a bit of extra cheese.

Cheese swaps: Colby Jack, mozzarella, or a cheddar blend all work great.

Toppings make it fun: Pickles + mustard = instant “burger vibes.” Add lettuce and tomatoes after baking for crunch.
