Description
These Slow Cooker Maple and Brown Sugar Glazed Carrot are buttery, sweet, and fork-tender. A simple, cozy side dish perfect for holidays or weeknight dinners.
Ingredients
2 pounds baby carrots (or 1 1/2 pounds whole carrots, peeled and sliced)
1/4 cup packed brown sugar
1/4 cup maple syrup
1/3 cup butter, cubed
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon pepper
Fresh thyme (for garnish, optional)
Instructions
Add the carrots to a 5- or 6-quart slow cooker.
Sprinkle brown sugar, salt, cinnamon, and pepper over the carrots. Stir to coat.
Drizzle with maple syrup and toss until carrots are evenly coated.
Place cubed butter on top of the carrots.
Cover and cook on high for 3 hours or low for 5–6 hours, until carrots are fork-tender. Stir once or twice during cooking if possible.
To thicken the glaze:
Option 1: Remove the lid during the last 30 minutes and switch to high.
Option 2: Transfer liquid to a saucepan and simmer for 5 minutes until thickened.
Garnish with fresh thyme before serving warm.
Notes
For less sweetness, reduce the brown sugar slightly.
Add nutmeg or ginger for extra warmth.
Swap butter with coconut oil for a dairy-free version.
Double the recipe for holiday gatherings—just use a larger slow cooker.
