For the Chicken:

  • 4 boneless chicken breasts

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 1 honeycrisp apple, sliced thin into half moons

  • 4 ounces brie cheese, sliced thin

For the Maple Glaze:

  • 1 cup apple cider or apple juice

  • 2 tablespoons pure maple syrup

  • ½ tablespoon minced garlic (about 2 cloves)

  • 1 teaspoon Dijon mustard

  • 2 teaspoons fresh thyme, removed from stems

  • ½ teaspoon kosher salt


Instructions

  1. Preheat the oven: Set to 375°F and line a baking sheet with parchment paper or spray a broil-safe skillet with nonstick spray.

  2. Butterfly the chicken: Slice each breast horizontally like opening a book, but don’t cut through completely. Season inside with salt and pepper.

  3. Stuff the chicken: Layer thin apple slices and brie inside each chicken breast, then fold it closed. Secure with toothpicks if needed.

  4. Bake: Transfer the stuffed chicken to your prepared pan and bake for 25–30 minutes, until nearly cooked through.

  5. Prepare the glaze: In a small skillet, combine apple cider, maple syrup, garlic, Dijon, thyme, and salt. Simmer over medium heat for 12–15 minutes, until reduced by half.

  6. Broil to finish: Turn oven to broil, brush the glaze over chicken, and broil for 10–12 minutes until golden and caramelized (internal temp 165°F).

  7. Serve: Plate warm and drizzle with extra maple glaze.

Notes

Use Honeycrisp or Fuji apples for the best crisp, sweet flavor.
Real maple syrup (not pancake syrup) makes all the difference.
You can assemble the chicken earlier in the day, refrigerate, and bake before dinner.
