Ingredients
4 boneless, skinless chicken breasts
2 large sweet potatoes, peeled and cubed
1/2 cup pure maple syrup
3 tablespoons olive oil
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
Salt and pepper, to taste
1 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)
2 tablespoons butter
1/4 cup chopped pecans (optional)
Fresh parsley, chopped, for garnish
Instructions
Preheat oven: Set oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Prepare sweet potatoes: In a large bowl, toss the cubed sweet potatoes with 2 tablespoons olive oil, garlic powder, salt, and pepper. Spread them out on one side of the baking sheet.
Glaze the chicken: In the same bowl, mix chicken breasts with the remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper. Arrange on the other side of the baking sheet.
Roast: Bake for 25–30 minutes, until chicken is cooked through (165°F internal temp) and sweet potatoes are tender.
Toast pecans: Melt butter in a small skillet over medium heat. Add pecans and toast for 3–4 minutes until fragrant and golden.
Serve: Sprinkle toasted pecans over sweet potatoes and garnish with chopped parsley. Serve warm and enjoy!

Swap chicken breasts for thighs if you prefer a juicier cut (add 5 extra minutes of cook time).
