  • 1 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

  • 2 tablespoons butter

  • 1/4 cup chopped pecans (optional)

  • Fresh parsley, chopped, for garnish


Instructions

  1. Preheat oven: Set oven to 400°F (200°C) and line a large baking sheet with parchment paper.

  2. Prepare sweet potatoes: In a large bowl, toss the cubed sweet potatoes with 2 tablespoons olive oil, garlic powder, salt, and pepper. Spread them out on one side of the baking sheet.

  3. Glaze the chicken: In the same bowl, mix chicken breasts with the remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper. Arrange on the other side of the baking sheet.
