Ingredients
1–1 ½ lbs boneless, skinless chicken breasts or thighs
1 tsp olive oil
2 tsp Italian seasoning (divided)
Salt and pepper, to taste
½ cup diced carrots
½ cup diced celery
½ cup diced onions
¼ cup diced sun-dried tomatoes
3 garlic cloves, minced
¼ cup flour
2 tbsp tomato paste (optional)
6–8 cups chicken broth
6 oz pasta (short-cut shapes work best)
1 cup heavy whipping cream
2 ½–3 cups fresh spinach
½–1 cup grated Parmesan cheese
Instructions
Heat olive oil in a large soup pot over medium-high heat. Add chicken, 1 tsp Italian seasoning, salt, and pepper. Cook until golden brown, about 4–5 minutes.
Stir in onions, carrots, celery, sun-dried tomatoes, and garlic. Cook until softened, about 3–4 minutes.
Sprinkle flour over the veggies, stirring well to combine. Add tomato paste if using.
Slowly whisk in chicken broth, scraping the bottom of the pot to deglaze.
Bring to a boil, add pasta and remaining Italian seasoning, then cover and reduce heat to low. Simmer 20 minutes, until pasta is al dente and chicken is cooked through.
Stir in heavy cream, spinach, and Parmesan. Simmer 5 minutes.
Taste, adjust seasoning, and serve warm with extra Parmesan or crusty bread.
Notes
For shortcuts, use pre-chopped mirepoix and pre-peeled garlic.
Swap pasta with rice or gnocchi for variety.
To reheat leftovers, add extra broth or cream since the soup thickens over time.
Make it dairy-free by substituting coconut milk and skipping Parmesan (or using a dairy-free alternative).
